This is my test render, sorry i wasn´t clear, i mean the squashed chocolate.

I tried to do:

- Filled Cube ( Mesh Modifier )
- ¨Triangle Teeths ¨of the cookie ( inside Mesh Modifier )

But i couldn´t get good results so i had to do manually selecting vertex and moving down where the ¨Triangles Teeths ¨ are to give the chocolate the squashed impression.

mmm... this is a little bit hard to do...I don't think there is a specific method to do that...
What do you think about using the "Collision Deformer"?
The collision deformer give you the possibility to push the wafer structure to the cream (made by a fillet cube with many segments)
This kind of deformer is a little bit heavy computation so try first with two different kind of structures to get the good result, remember also, the deformer need to be set in order to works properly to avoid errors so, when you found the solution you can change all by putting inside final objects...

Alex,

One more question please.

How can i achieve this kind of bump or displace texture in the side part of the Waffle.

I want to make inner extrude.

I tried to selected the sides polygons and use Vray displacement material, but displacement occur in the the entire object.
And so i used Bump material with -10 bump but i can´t get a good result.

Thanks in advance.
